Today.

Today I woke up and made my girls a fun and healthy breakfast. 
I made it for me, too : ) I blended gluten free oatmeal in the food prossesor until it was the texture of flour, added baking powder, eggs, coconut milk, coconut oil and a bit of 100% maple syrup and then made them in the waffle maker. So good! I've been low on carbs so inventions like this should help... We'll that and more veggies!
I ate my eggs on the road because it was a busy morning of preschool and gymnastics but I have committed to myself and I'm not letting busy throw me off. 
I bought a Simple Truth organic rotisserie chicken the other night and have been eating off of it for a couple days. 
Right now I'm boiling it down and making a yummy chicken, veggie and rice soup for dinner. Gimme all the carbs!! 
It's been a great day and I'm planning on going out for a jog this evening. Yikes! I haven't run since... Ever? I'll surely be posting on how it goes.
